First impression,
At first glance, this sharpener seems close to the more expensive M300 (which I have never used) both in appearance and features. I quickly scanned the manual and then put my carbon steel butcher knife on the line. The noise from the sharpener was slightly variable, but not excessive and resulted in a visible ground edge on the blade. The included instructions advised keeping the blade edge horizontal to the table while pulling the knife through at a steady clip, and which slots to use when. The acid test of slicing a nearby envelope was not all that impressive, so I suspect either more sharpening or more experience or both will be required. I was left with the conclusion that sharpening will be achieable with this device. eof
